Taco Soup

I got this recipe from someone I work with, Mrs. Green. This is one of the best taco soup recipes I have ever tried and it is very low in calories. I usually make a double batch and freeze half of it for another time.

Ingredients
1 can of Ranch Style Beans (do not drain)
1 can of Corn (drained)
1 can of Rotel (do not drain)
1 can of water
1 lb. Chicken
1 pkg. of Ranch Dry Salad Dressing Mix
Taco Seasoning

1. Cook the chicken, sprinkle with taco seasoning, and shred.
2. Mix everything in the crock pot and cook for 2 hours on low.

Chicken Casadias

Ingredients
1 lb. Chicken
1/2 c. Shredded Cheese
Jalapenos
Red Bell Peppers
Tortillas
Butter Flavored Spray

1. Cook the chicken and shred.
2.Mix in the jalapenos and bell peppers in with the shredded chicken and cook on low.
3. Sprinkle the cheese on top and melt.
4. Put chicken mixture in tortilla and spray with butter spray.
5. Brown casadias on both sides and serve with sour cream or freeze for later.

Cornflake Chicken Tenders


I love this chicken. I freeze it for salads, pasta, chicken wraps and
anything else I can use it for. This recipe came from Abby at



Ingredients
1 lb package chicken tenders
2 c. cornflake cereal
1 egg
2 tsp hot sauce
1 tbsp dried parsley
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper

1. Preheat oven to 350 degrees.
2. In shallow container whisk together egg and hot sauce.
3. Place cornflake cereal in a gallon-sized plastic bag. Crush flakes with a meat mallet. Add parley, onion powder, garlic powder, and pepper to the bag. Shake until combined.
4. Dip chicken tenders into the egg mixture. Place into bag with cornflakes and shake to coat. Once coated, transfer tenders to a baking sheet lined with foil. Spray with cooking spray and bake in preheated oven for 15 minutes.
